I don’t know how the rest of you handle pumpkin harvest, but I’m really overwhelmed! Who even eats this much pumpkin?! TOO many pumpkins!

I don’t want to waste any of the Jarrahdale pumpkins that I grew, but after baking and processing half a big pumpkin, I’ve realized I have no clue what to do with all of the pumpkin puree! Besides, processing half a big pumpkin kicked my butt and I had to put the rest of the cooked pieces in plastic in the fridge so I could work on it the next day.

I need to at least carve up the best pumpkin to get the seeds for next year. That is, if I ever want to see or eat pumpkin again! I think I might need to give the rest of the pumpkins away!

I will have to see if the sheep will eat the cooked peelings.

Based on this pumpkin, each of the remaining big pumpkins should yield about 16 cups of pumpkin puree! This situation reminds me of the movie Forrest Gump when he is having the shrimp recipe conversation with Bubba. I’m going to have to use as many pumpkin recipes as I can find. Hopefully we don’t turn orange!
